Brain-boosting dips
These nutritious dips feature great flavors with a fraction of the fat, salt and preservatives often found in store-bought dips. Serve them with cut-up fresh vegetables or with oven-baked wedges of whole-wheat pitas or corn tortillas.
Edamame bean dip
SERVES 4 (MAKES 1 CUP/250G)
1 cup (165 g) shelled edamame
1/2 cup (130 g) silken tofu
21/2 teaspoons (12 ml) soy sauce
11/2 teaspoons (7 ml) sesame oil
1/2 teaspoon (2 ml) wasabi
Cook the edamame in a saucepan of boiling water for 5 minutes. Drain and rinse under cold running water, then drain well. Put the edamame and tofu in a food processor and process until combined. Add the soy sauce, sesame oil and wasabi, and process until well combined and almost smooth, occasionally stopping to scrape down the side of the bowl. Transfer to a small serving bowl.
